AVIAL

Ingredients
1) vegetables 2 cups (beans, carrots, potato, drumsticks, raw bananas & any
vegetable - cut in to length wise-).
2) Cumin seeds – 2 pinch
3) Coconut – fresh grated – 1 cup
4) Green chilies - 3 nos.
5) Turmeric – 2 pinch
6) Shallots – 3-4
7) Curd – ½ cup ( you can use tomatoes instead of curd)
8) Coconut oil- 1-2 tsp (seasoning)/ any oil
9) Curry leaves – few
10) Salt – to taste.

Method:

Cook all the vegetables in a thick bottom pan with little water in low flame in the mean time grind (pulse) the coconut with green chilly, cumin seeds, turmeric powder & 4 shallots for 1-2 times. . Wait till the veggie is cooked 3/4th and then add coconut paste and salt then allow it to cook again for about 4 mints. After that, add fresh curd (consistency should be thick) and mix well. Do not cook after adding the curd. Do a taste test at this point, add salt if necessary. Finally add 3 teaspoons of coconut-oil & curry leaves and mix thoroughly and turn-off the gas your aviyal is ready.
